
I'm gonna say it: eggs can be pretty boring.
But throw in some cheese and fresh veggies and you have yourself some exciting eggs!
Here is my take on a cheesy, spinach frittata. Perfect for a weekend brunch, or make it ahead to enjoy as a hearty snack for the week.
What you'll need:
- 8 eggs
- 4 oz. goat cheese crumbles (feta is a good substitute)
- 5 oz. baby spinach (kale is a good substitue)
- half an onion, diced
- 1 green pepper, diced
- half a cup parmesan cheese, plus more to sprinkle on top
- 3 Tbs olive oil
- salt & pepper to taste
How to make it:
While preheating the oven to 325 F, heat the oil in a sauce pan and soften the onion and green pepper for a few minutes. Then add your spinach until it's cooked down.
Add eggs, cheese, salt, and pepper into a large bowl. Add your veggies once they're done cooking, and mix well.
Grease an 8-inch cake pan, and pour your egg mixture into it. Sprinkle a thin layer of more parmesan cheese on top.
Bake for 45 minutes at 325 F, and serve with fresh cherry tomatoes. Buon appetito!
