Easy Recipe: "Egg(un)roll"

This protein-packed, veggie-rific meal is ready in under 30 minutes!

Eggrolls have always been my favorite part of my Chinese takeout order. Well, those and fortune cookies. But today's fast and easy eggroll recipe is all about lowering the carbs, and upping the protein!


Ladies and gentlemen, I present: The Egg(un)roll!


This baby cooks in just minutes, and you can add as many (or as few) ingredients as you like! Here's how I made mine:


Ingredients:


1 lb ground beef

1 14-oz bag cole slaw

1 8-oz bag frozen peas

1 crown fresh broccoli, chopped

1/2 cup teriyaki sauce

salt & pepper to taste

1 lb ready-cooked rice

3 slices of pita bread (optional)

3 TBS olive oil


Instructions:


Brown the beef in the olive oil in a frying pan. Once cooked through, add the cole slaw and teriyaki sauce. Mix together for a few minutes.


Add peas and broccoli. Stir together and let veggies soften for a few minutes. Add seasoning, stir, and let the flavors meld together!


Prepare rice and serve everything with half a slice of warm pita bread. Enjoy!


Serves 6


There you have it! A super easy, fast, healthy "Egg(un)roll!" Will you try this?


Modifications:


You can easily modify with ground turkey instead of beef, and add other veggies like onions or bell peppers. You can also use soy sauce instead of teriyaki if that's your jam! Or prepare quinoa instead of rice.
